I want to have an advice on how to protect my design with a fuse and NMOS for reverse polarity.

How to choose those device for 12V supply?

Would you mind elaborating on what your overall system is? Are you wanting to protect against reverse current on a Type-C or Type-A port? The reason why I ask is that this forum is focused on power interfaces such as USB and Ethernet.
