I would like to check something please:
If the input to the LM137 is -7V, the output -5V and the load current 1A, will the device's power consumption be ~ ¦(-7 - -5)*1¦ = 2W?

A little clarification:
The power consumption is the input-output voltage differential times the output current (plus negligible power loss trough the adjust pin).
The output current is the total of the load current plus the current through the voltage divider that sets the output voltage level. I this case, with 1A load, it will also be negligible but could become significant in the calculation for lower load currents.
