1 In my application design, I don't use any of the 3 temperature sensors
As they are not needed in our circuit. If not, it should be left floating or grounded?
2 We don't need MOS driver charge/discharge protection. The outcome Over Voltage will affect the stability and performance of BQ7694003?

The answer to your question is in the datasheet (see image below), in this video (https://www.youtube.com/watch?v=B5dsIc2C_xA) and in the device FAQ (http://www.ti.com/lit/pdf/sluub41). The TS1 pin is also the boot pin for the device - make sure you provide a rising edge to bring the device out of Ship mode. Refer to this app note for more on this topic: http://www.ti.com/lit/pdf/slua769
Regarding using no FETs, the CHG and DSG pins can be left unconnected (as stated in the FAQ and video). Over-voltage is not an issue for the BQ76940 since it is within input voltage range for these pins, but it is a safety issue as battery cells can be dangerous when over-charged.
