PSRR is important for many various applications.
At 1KHz you would be more interested in audio frequency applications, to filter out noise which can be heard by the human ear.
At 100KHz you can make quality comparisons between LDO's of different manufacturers, so this is a good frequency to review this metric.
Additionally, motor driver circuits tend to operate in the dozens of KHz, so PSRR at 100KHz would be a good metric for these applications.
For switching converter applications you would want PSRR anywhere from the low hundreds of KHz to even as high as 2MHz.
The noise which is blocked by the LDO in the PSRR spec is conducted noise.
