We will not be using, and will thus be disabling via I2C register setting, the LS/LDO function of the BQ21061. Do we still need to attach capacitors to those two pins, or can we save the money and leave them unconnected?

Hi Scott,
For the VINLS pin or the LS/LDO pin, you don't need to attach any capacitors if you are not using the LS/LDO function. You can connect VINLS pin to GND and leave the LS/LDO pin floating.
This is something I plan to address on a "pin guide" about to release soon. :)
