When using I2C can the UCD90160A output specific voltage values? Or does it only output health status?

UCD90160A is a PMBus-centric device, all the monitoring voltage can be read with PMBus command. Please refer this notes for the commands usage.

Thanks for the app note.

From the USC90160A datasheet it also mentions I2C interface as an option. Are you only allowed to read the monitored voltages with PMBus.

Would you connect the I2C data to pin 16 and I2c CLK to pin 15 in this scenario?

Yes, PMBus is the same as I2C from the communication point view.
