I know this document, I was wondering if there's an option for finetuning the control loop using Fusion Digtal Power Studio 

as the alternative the converter can be split into two separate analysis: step up and step down and tuned separately 

Hello, the Fusion Digtal Power Studio does not support loop tuning for PMP21529 at this moment, but you can change the control loop coefficient in the firmware, then redownload the compiled code.

setting the coefficients is not an issue for me, I wanted to see how they influence frequency and phase plots.

PS is there a spice / LTspice model of the regulation stage?
