Why not, it should be possible. Please, check this link, there is already Ubuntu 16.04 images for BBB.

Depending on that which version of Ubuntu you want to use, install to your board the closest kernel version to Ubuntu's default kernel version. Then find an arm compiled Ubuntu filesytem or you better cross-compile one with the exact tool-chain which you have compiled the kernel and U-Boot. Then, here would be the hard part, you will need to bind all the necessary stuff like system calls, modules, graphics to make the Ubuntu function over that kernel.
