[TDA4VM] Is there any document for cores load of all usecases?

Didn't checked details of the demo or use cases in SDK. In gernerl, for core running Linux or other HLOS should have its own loading info output such as top command. For core running BIOS, if there is no such info, you can refer Section 9.1 of BIOS UG http://www.ti.com/lit/ug/spruex3u/spruex3u.pdf to get loading info.
