Is there any way to run the safety bubble demo without the robot ? I am interesting by the gui to get data and moving the sensor by myself .

The safety bubble demo does require a moving platform aka robot. With that in mind you are free to modify the existing demo within the ROS environment to fit your purposes. Exactly how to do that is beyond the scope of this forum, but all the code is available as well as extensive documentation about ROS on the web.
