IWR6843: mmWave sensor for interactive project

I am working on a project for a Dutch Industrial Design company and we want to use the mmWave sensor. I would like to get some advice on which mmWave sensor suits our project 
best and what other components we need.

For our project we want to be able to track movements of persons in the outdoor environment. We want to know which direction they are moving towards and the distance to the
sensor. For our project we want to measure movements from a short and long distance. For example detect movement from a distance of 1 meter and also 10 meters. It is important
that we can also pinpoint one person to focus on, because we want an object to interact with the movements of one or two persons. We were thinking about using a mmWave sensor
for this. Is there a type of mmWave sensor you can recommend. And is it compatible with a Raspberry Pi?

I was told by customer service that the IWR6843 sensor would suit our project.

I would also like to know if we need other components besides the IWR6843 sensor that we can find at Texas Instruments.

And I have a few additional technical questions:
  • What is the output data the sensor generates
  • What is the data the sensor can measure?
  • What are the chemical properties of the sensor? Properties such as UV resistance, operating temperature, operating limits regarding humidity.
  • What is the impact resistance level of the sensor regarding vandalism?
  • What is the IP level of the sensor? (e.g. IP-64)?
  • Does the sensor comply with the European and Dutch GDPR?
  • How many people can we track with one sensor?
  • What is the possible area the sensor can track/measure?
  • If we would place a product under an angle, how would this influence the possible tracking area? For example, if we place it vertically?
  • What is the delivery time of the sensor currently and is this expected to remain the same in the future? Our company is based in The Netherlands.
  • Could you provide us the technical properties of the sensor? (e.g. mounting possibities, materials, measurements).
  • We want to place the sensor in the outdoor environment. We, therefore, want to make a casing around the sensor. Does the sensor still work if it is placed inside a plastic 3D printed casing? And does it still work if it is placed inside a metal casing?
  • Does wind influence the sensor?
