Thanks for posting to the PS forum! The datasheet does not clearly state the pin capacitance but when states the I2C frequency it does state the capacitive load as 50pF. Not sure if this is the pin capacitance plus the rest of the I2C bus but it might be a good starting point for your calculation.
Another thing to note is that you could possibly also calculate this value by measuring the rise time from the I2C line by placing a known resistor as the pullup, since you have a known steady state voltage you could theoretically calculate the capacitance of the pin as well as your I2C bus to chose an ideal pullup resistor value.
