This is because the data set that you collected is a 2 TX 1 RX matrix. If you had done 1 TX 1 RX you would have had that 160000 matrix.

Thanks for your response. It means each TX sends (ADC Samples * Number of Chirps) per frame which is collected in a number of receivers. Please correct me if I am wrong.

Yes your initial statement is correct. The form of the data can be seen in the DCA1000 User Guide in the Radar Toolbox for mmWave Sensors. It is in the final section labeled "7. Interpreting Data"
There might be something wrong with your configuration that you are getting 0s. Can you show me your chirp settings?
