We are making a wearable watch and I was wondering if I could use FDC1004 to detect when the watch is contacted water or if emerged in the water please.

Yes, the FDC1004 can be used to determine the presence of water. In your application, the ability to determine the water will depend on the materials of the casing and the response you get from other interactions happening to the watch (like a hand interaction).
