IWR6843AOPEVM: Example of what the data received looks like?

If you are not understanding the "Understanding the UART Data Output Format" guide, then I would urge you to get your hands dirty with the serial output. We provide example parsing scripts ([SDK_3_LOCATION]/packages/ti/demo/parser_scripts/ , look at parser_mmw_demo.py and mmw_demo_example_script.py). 

No, the data does not come out as (x, y, z and velocity) in an array format. First there is a frame header that is 40 bytes long, which gives some metadata and then describes the number of each type of TLV (i.e., a packet) to expect in this transmission.

Being that you know the exact format of the header, which details the types and amounts of TLVs to follow, you can parse the serial output. 

As for your second question, no. The closest thing would be the point cloud output, but you would have to create some high level logic to actually classify those objects.
