Generally I don't believe we provide a formula, and its generally required to simulate the antenna to get an accurate estimate. HFSS is one of the more popular tools for simulating/designing antennas.  

However, there are many online calculators for antenna design, including for patch antennas:

For an array, your gain increases as the number of elements increases, by an adder of 10*log(N) (in dBi).   If you add your elements all in a row along the x-axis, the beam will tighten in the x-axis.  If you want a 'pointer' beam overall you need to grow in both X and Y.  

For the array, its important to also consider losses and also matching.  Ideally gain increases as 10*log(N), however this doesn't consider that there may be loss.  After accounting for loss you may need to include additional elements.  Also you should carefully ensure that you maintain good matching.
