IWR6843ISK: How to get a high number of samples/cycle on low beat frequency (short range)

I will be using a version of the 6843ISK with my own horn antennas.  We will make a new board for that.  No worries.  It will have a 10 degree beam width and be looking at a single person from less than 3 meters.  So, the beat frequency will be fairly low, but the information I need to collect will be in some higher frequency components within that low beat frequency.  I want to be able to maybe do my own FFT on the sampled data.  Right now it appears the algorithm TI has is sampling at just the Nyquist rate, like 2 samples per cycle at the max range I set (maybe 3 meters).   How can I get the sampling rate high/cycle.  This is a special application for me.  Help!  I would like just to use the maximum sampling rate possible.  Don't worry about memory.   Please don't tell me to use the estimator.  It doesn't give me what I want.  Thanks.
