I assume that when you are running two radars simultaneously, you did not run in a master/slave mode to control them to trigger one radar at a time (TDD) mode. In that case, interference can potentially occur (possibly after hours or even days of running).
If you can prove that the problem was not there with one radar, then we know that it is related to interference. Then we can focus on the interference control for the two radar cases.

To help to understand more about interference, you can look through the following app notes. Especially section 2.3.3. about parallel interference.
The parallel interference can look like a ghost. And depend on the delay between the two device chirps, the ghost position can be changing. And the ghost may not be that clean either.
