Hi Jeff,
It is possible to measure the conductivity given that the conductive elements (e.g. ions) are of sufficient concentration to reduce or enhance the strength of the H-field generated by the sensing coil. If pH for a known liquid is a function of conductivity, then it is indeed possible to deduce pH from the output of the LDC1000.
