How to set the coil inductance ? It should be related to the system accuracy if we measure the inductance. So what is the relationship between accuracy and resonant frequency ?

The inductance is set by the physical properties of the sensor. The area, number of turns, and if it is a PCB inductor, the number of layers and the separation between layers.
The inductance typically needs to be larger than a minimum value - typically 3uH or more is needed for the LDC1000 family of devices, and the LDC131x/161x can go a little lower. An important inductor parameter is the parasitic loss (the Rs or Rp). The lower the loss of the inductor, the better.
As for the relationship between accuracy and resonant frequency, for the LDC1000 family of devices, the low fsensor is, the more resolution. For the LDC131x/161x devices, the measurement resolution is effectively set by the referne count.
