Presently the OPT3001 detects light as the human eye sees it - I imagine that with some color-filters, you could probably isolate R, G, and B light and measure those wavelength passbands accordingly. You would have to scale up the R and B to match the intensity of the G since the G has the highest response. I also would imagine you would need to do some testing and calibration, possibly with a monochrometer, to make sure you're scaling the output accordingly.
You would also need 3 OPT3001 devices to do this, or one with automated, adjustable filters.
Might I ask the application and desired specs?
