Regarding Humidity + Temperature sensor in Vacuum Packaging machine

Greetings of the Day!!

I'm Dinesh K from Minipack-America,USA.I would like to request you to support in selection of right humidity plus temperature sensor for our end application product.

We are developing vacuum packaging machine for food industry,so on our board we have two pressure sensor ,one is differential pressure sensor and one is absolute pressure ,so we can control vacuum in the machine through electromechanical relay.

I would like to know about humidity sensor selection criteria in our machine ,which factors need to consider etc.Below are the some criteria which would need to consider ,may be I am wrong about these below selection criteria for humidity sensor.

1)Should we measure the relation of millibar to humidity, when sucking out the air out with a vacuum pump?
2)If millibar changes fast then humid sensor info should also refresh fast??
3)Should we know if airflow is needed for measuring humidity measurement or just a one-way hose like Pressure sensor should be required to measure humidity inside the chamber of the machine.
4)Should we know " Warm-Up Time / Speed(Refesh) / Accuracy / Flow " for humidity sensor measurement.

here we want to measure humidity in the chamber of a vacuum machine,so I think important point is that humidity level changes fast, when we have a food item like a soup or water in the chamber. The lower the pressure (means higher vacuum), the faster the liquid starts to boil and so it increases the humidity level.

Kindly see the attached image for your reference.I would appreciate your suggestion regarding the humidity level and millibar pressure relations as well as necessecity of air flow for humidity measurement.

    HDC1080 is the released TI humidity sensor.

    It's an relative humidity and temperature sensor. It embeds a sensing element, the temperature sensor and analog frontend.

    Regarding the others questions more details are needed.

    As rules of thumb: the air flow is needed because the sensor sense the environment close to the device itself. In case of thermal gradient or no ventilation is possible that the condition close to the sensor are not the same of the environment.
