The description for this sensor states you need a 5V, 2.5amp power supply. What is the typical power consumption of the sensor? What is a portable power supply you might recommend to use with it?

Any portable power supply which can provide at least 2.5A on the output port should be fine. Usually, the output power ports are USB ports (aimed at charging cell phones, tablets etc) so you will also need a USB to barrel jack cable to power the EVM.
I personally use the power supply and cable listed below which I purchased from Amazon.

Please note that the above should not be considered as recommendations either by TI or by me :). These are just the one's I use personally and they happen to work but other options should be fine as long as both the power supply and cable are guaranteed to deliver 2.5A to the device.
