Customers can only select one of the channels for testing in the host computer TDC1000 window CH_SEL. If he wants to test two ultrasonic transducers at the same time, how to set it up?

The TDC1000-TDC7200EVM is setup only to transmit/receive at one channel at a time. The EVM can be used to say first transmit from 1st Transducer, receive the signal at 2nd transducer and then 2nd transducer can transmit and the Transducer 1 can receive.
Alternatively both the transducers can transmit and receive independently however only one a time.

Is TDC1000-TDC7200EVM and host computer set to display only one sensor value? If I use TDC1000 and TDC7200 chips to make products, can't I send and receive data at the same time?

The device cannot work on multiple mode in parallel.
One could connect 2 transducers to the TDC1000 device however if you intend to use Transducer 1, say to measure the liquid level in jar 1 and Transducer 2 to measure the liquid in jar 2, you cannot get both the outputs simultaneously.
However in level flowing measurements, we typically connect the Tx1 to the Transducer1, Rx1 to Transducer2 and the Tx2 to Transducer2 & Rx1 to Transducer1 (see fig 57 in TDC1000 datasheet), wherein the first transducer sends the transmit pulse and the 2nd transducer receives those pulses and then reports the ToF values.
