We will be using the TMP117 in an upcoming project and require NIST tractability and thus the unique serial number of each sensor.
Reading the data sheet I had assumed (incorrectly it would seem) that his unique serial number was stored in the EEPROM1 register, however after looking at both of the EVMs I got I realized that this value was the same for both of them.
I'm assuming now that the serial number is the value of all three registers, so is the correct serial number of this sensor:
0xD6510F8416F1 or is it something else?

Yes, it is correct to consider all 48 bits (or 6 bytes) the entire Unique ID for NIST traceability or UID usage.
