Matlab post processing source code is not available.

You could refer to below links training modules (5 Modules) to understand the post processing aspects.

Just to add few details, If you want to read the files from DCA1000 hardware and interpret the data, then below app-note has some details.

Also below link provides mmWave studio user guide which has more details what goes behind the post processing elements.
