TMP122-EP: What does "The TMP122 converts continuously" statement in the datasheet mean exactly? When is a conversion initiated?

We are using a TMP122-EP in oure design and need some clarification on the datasheet:

On page 5 in the section called "Communicating with the TMP122" the datasheet states: "The TMP122 converts continuously". We would like to understand this better. What triggers a conversion and when? The purpose of this question is to ascertain exactly how "stale" the temperature data returned is. On page 10 in table 11, the datasheet indicates that a conversion takes 240ms in default mode (12 bit resolution). This indicates (correct me if I'm wrong) that the temperature reading is at least 240ms old, assuming we read from the device exactly after a conversion has completed. If I read the temperature at any time (meaning not exactly when a conversion has completed), what is the worst case scenario as to how old the data could be?
