The etching tolerance quoted is sufficient. The EVM designs are functional and achieving close to what we expect in terms of radiation pattern, gain.
Better etch accuracy is always welcomed of course to more closely match the RF theory design dimensions. To achieve these 20um tolerances across the antenna structures, across the PCB, across multiple panels of PCB, some additional etch tuning runs of the PCB may be required. If possible, I suggest having a meeting with your fabrication team to understand their specific etch and repeatability limitations and what they will need to achieve the tolerances you want.
