I believe you need to write in the default values for that sensor (that are provided by the LMP91000 GUI) check it over some operating conditions, then adjust as required/necessary.

For the calibration period, do we have to change the micro controller program each time or write a program from the beginning that automatically calibrates the new relationship (gas concentration to sensor output voltage) at the time of calibration?

that is up to you and the end product goals you have as requirements. According to the maker of these sensors, they take around two hours to stabilize after power up and each sensor needs to be calibrated individually or in batches, over temp, %RH and possibly pressure.
