IWR6843ISK evaluation board consists of 8 layers.
On the other hand IWR1642ISK and IWR1843ISK use 6 layers.
Please let me know if you know why 8 layers are needed for IWR6843ISK and how the 2 layers are utilized.

Your observation is right,
In the latest EVM we have added additional circuits (CAN, USB to UART, USB based powering) and 60 pin connector for the direct DCA1000 connector which has LVDS routing needed additional space to accommodate these additional circuits, we needed additional two more layer.
Below is the Layers and it's routing topology:
L1 : Top layer and Antenna routing
L2: Ground reference to top layer
L3: Routing Layer1
L4: Routing Layer2
L5 Routing Layer3 (& Power routing)
L6 Routing Layer4 (Power routing, LVDS routing)
L7: Ground reference for bottom layer
L8 Bottom Layer
Hence two more layers added in the new IWR6843ISK.
