Or does the fixed value less than 0.1C shift after mechanical stress is applied?

Typically when we talk about mechanical stress on temperature sensors, we're talking about a one time event that happened when the device was soldered. The IC is held under some tension, if you can imagine, due to the solder curing at an elevated temperature. Therefore, temperature error due to mechanical stress of soldering is constant.
If you're applying another mechanical stress to the device, I would expect any error caused by it to be constant only if the stress is constant.
