I am looking for a sensor to measure different levels moisture content in hair. Was thinking to use MSP430 but was wondering if there are other suggestions of sensors to use.

    Welcome to E2E Forum and thanks for posting!

    The MSP430 microcontroller family is a great basis for almost any project like this. Perhaps take a look at the HDC2022 (and use I2C with MSP430) or some variation of an analog soil moisture sensor, which would be fed to MSP430 ADC.
