Please note that accuracy of the sensing is dependent on the SNR of the reflected signal. If you environment is feasible to provide the required SNR for accuracy then mmWave data will work for it.
Antenna Design, constrained environment, Lens for mmWave are some of the knobs you have in your hand to improve the SNR to improve accuracy.

Just to confirm, then it would be possible to use the lab high accuracy 68xx even for distances greater than 20m, as the oob can be used?

Yes this is true but the provided configuration file has a limitation of 20m as a result of FFT sample size.
