I think the logic is good, but I am not sure if it is ok.

Looks good - the logic is the same and I don't see any problem with using the TMUX1237 to replace 2x SN74CBTLV1G125's here. One note about implementation is that the SEL pin should always have a defined logic state - so if SHT35_RST is ever floating I'd strongly suggest adding a pull-down / pull-up to ensure a defined logic state if SHT35_RST is ever floating - if it doesn't ever float there shouldn't be any issue.
