Our customer ask us about a behavior when the control input will change from High or low to metastable. Does it keep previous condition or you can't assume if COM will be connected to NO or NC?

The control pin can be considered a CMOS buffer with a Vih and a Vil.
If the control is in an invalid state the switch state is unknown and could oscillate between No and NC.
