These differential analog signals of PAM5 (-2,-1,0,1,2) running at 250Mbps per pair are sensitive to crosstalk.
They are 50ohms single ended and 100ohm differential ; hence low Ron will be ideal.
what is a good recommendation for the 2:1Mux.

It looks like you need to search the TI.com switch selection tool for a 8-channel 1:2 SPDT switch/mux. In this tool you can select and sort among the parameters found on the left hand side to find a device that suits your needs. In the link below I selected and sorted on crosstalk performance at your request. I would start by looking at the TS3L301 and TS3DV642.
