What do you mean by "close"?

You can click the disclosure triangle to hide the files.

You can click on a file in another project to make that the default one for debugging.

I want to close the Project and its related files from the Workspace. But don't want to delete them. Currently, I can see the option to delete the project not to close the project. other IDEs like Keil, and MCUXpresso have this option.

With CCS, if you deleted a project it gave you the option to remove it from the workspace, but keep the files. This way you could re-import the project later. Theia just deletes the files.
