CODECOMPOSER: How to create a new workspace that isn't defaulted to C:\Users\<username>\workspace_ccstheia?

Tool/software:

I installed V20.0.3

I have an existing directory of V12 projects. I would like to create a workspace and then import folders to that workspace as well as create new projects.

1. How do I create a new workspace?

2. When creating a new project it wants to continually add these to "C:\Users\<username>\workspace_ccstheia" , how do I get around this?

That is the default (and it is fixed) but once you switch the workspace, it will remember this setting and use that in the future.
