Hi, we are planning on buying code composer studio 5.1 for linux. We have been told that CCS5.1 supports debugging in the linux kernel.
Question:
1. Will either a 560 or a 560v2 work, or is it just the v2?
2. Does 5.1 support debugging of linux?

Debugging the Linux kernel will work with an XDS emulator, even an XDS100. The only difference will be speed. If you are planning on running on a Linux PC you will also want to check if your emulator has a Linux driver. CCSv5.1 supports both Linux kernel debug (stop mode via JTAG) and Linux application debug (run mode via gdb over ethernet). There is more information here: http://processors.wiki.ti.com/index.php/Linux_Debug_in_CCSv5
