is there a way to save the output printed on the CCS console in a file? How?

Besides copy and pasting the contents manually, you can also configure your project to stream C I/O to a file:

www.youtube.com/watch

Note that if you don't see the "Run/Debug Settings" you will need to select the option in the lower left corner of the dialog box to show the advanced settings.
