Is there a tool/addon in CCS 8.0 which allows to see how many interrupts per source were triggered on C66 (I am using J6 Ex)?

Hello Jakub,
There is an Interrupt Analyzer view that you can trigger via an "Interrupt profiling configuration". You can search for "Hardware Trace Configurations" or "Interrupt Analyzer" in the Help contents of CCS (Help menu-> Help Contents). There are details here how to enable the analyzer view. Note, to trigger it you need a certain XDS emulator and is available for Cortex-M targets only.
