I rather like The Scientist and Engineer's Guide to Digital Signal Processing (Steven W Smith). The math isn't overwhelming, the examples are in BASIC (!), and the style appeals to intuition. I often refer back to it when I forget what some term means. And if you want you can read or download the book (by chapters) from the Web site.
