I noticed that the on-resistance of the GaN device is 30 milliohms, would it be feasible to replace it with a 70 milliohms product instead

Hi,

Since the on-resistance increases from 30mOhms to 70mOhms, the conductions losses will also increase significantly. This will influence the total losses and power to be pushed through each stage.
