We have only an IBIS model for the ADS1298.
That being said, we do have TINA Spice models for a limited number of A/D converters.
Perhaps one of those could be a good replacement for the ADS1298.
You can search for them at the following URL:

As a start try typing 'ads' in the search field. Most of what you will see in the search results are IBIS models, but there will be Spice models that have TINA Model or TINA Reference Design in the Model Description column.
Hopefully one of those will work for you.
To use those models, you will need to download & install TINA-TI, a free Spice simulator available for download from the TI home page:

One of my colleagues reminded me that TINA-TI does contain some built-in models for A/D converters. I believe those are high-speed pipelined A/Ds.
