Does PSpice/Pspice for TI use GPU of PC if it is available to run faster?

In general, GPU's cuda cores could be use as resource of computation. Some of applications uses them.

No. PSpice does not utilize GPU for computation.

Are more MCU cores handled for computation? More MCU cores, bigger computation resource.

Yes it takes advantage of multi-core processors.
