Excuse me, how to send out and unpack the acceleration data in Bluetooth mode UUID after adding FIFO mode to the simple_peripheral process in the SDK?

Thank you for reaching out.

Could you please specify whether you want to use a Bluetooth registered profile? If yes please point us to this profile.

If you are not looking at using a Bluetooth registered profile, you can pack the data as you want and transmit it using a GATT characteristic as done for the characteristic 5 of the simple_peripheral example.
