Please take a look at the GAP_LINK_ESTABLISHED_EVENT handling in SimplePeripheral_processGapMessage.

The application receives a gapEstLinkReqEvent_t. If you look at the definition of this struct you can see that it contains the device address:

  uint16_t connLatency;        //!< Connection Latency
  uint16_t connTimeout;        //!< Connection Timeout
  uint8_t clockAccuracy;       //!< Clock Accuracy
} gapEstLinkReqEvent_t;

You can use this to extract the address. E.g. add it as a new member of the connList.
