Hi we´re looking for a ARM that we can read some 8bits signals and have a audio imput and audio output.

This ARM must have a bluetooth. Can we do this thing with a CC2540??

If you are trying to send audio over bluetooth, BLE is not suitable and I would recommend Classic Bluetooth instead

There is no ARM CPU comes with BLE or BT. You need a extra BLE/BT module to connect to your ARM CPU. If you want to transmit audio, I would recommend you to use CC2564 which is BLE/BT dual mode chip.
