I would like to know if it is possible to connect an additional sensor
to the SensorTag CC2650STK.

What additional sensor do you want to connect?

Any other sensors(with I2C interface) like Flow sensor or if we want to
try with a different Temperature, Humidity sensor etc.

There is a DevPack interface for expanding module. There is not many information of it. You can try to refer to Build Your Own Dev Pack.
