During connection, either as a central or peripheral, is it possible to determine the version of, ie BT4.x of BT5.x, of the device I'm connecting to?

Hello Chris,
You can use the HCI_ReadRemoteVersionInfoCmd to check what the peer device supports as described in these threads:

If you control both sides of the link you can also define your custom info in device info service or a custom service.
